We sat down with Katie Lea, design director of Foundation Coffee on why they’ve chosen FOUND for their fourth Manchester site. We asked Katie about their motivations behind starting the coffee house, why they chose Aspin Lane, and their exciting plans for the future.
Tell us a bit about Foundation Coffee House?
Foundation Coffee House started life in 2015. We were one of the first independent coffee houses to open in the city, and as a new venture owned by local design practice NC studio, our interiors and brand quickly established us as leaders in the scene. With a passion for coffee at the heart of the business, we have steadily grown to 4 locations in the last 8 years.
We have a wide menu of brunch classics, freshly made cakes and speciality coffee’s. At every Foundation you can find the same high quality, freshly made menu but each site has its own feel.
What is the vision for Aspin Lane?
The new Meadowside location aims to become a Foundation to the new community being established in this area of the city. The city is developing and growing fast. New areas are being unlocked on the fringes of the city centre, we want our new location to be a safe and welcoming third space for the local residents or workers in the area to come to.
With an incredible pedestrianised street affronting the green space of Angel Meadow, a much needed Manchester sun trap is formed and it seems like the perfect place for enjoying a cold one in the sunshine.
Why did you choose Aspin Lane/ Meadowside?
The development plans for this area are particularly exciting to us as it will have a real focus on independent hospitality. The area is under incredible change, we are excited to be a part of this regeneration.
Finally, what is your go-to brunch and coffee order?
Soft poached eggs on some buttery toasted sourdough with a black americano. Classic and simple but when you are using the best ingredients it hits the spot everytime.
